Cinco De Mayo Mexican Rice and Street Corn

Now this is the perfect side to any Mexican night! 

I think you can jazz this up in many ways! Diced peppers, avocados, tomatoes, sour cream or salsa! I love making this when we do taco nights and sometimes Ill throw taco toppings right on my rice. My husband likes to add this rice to his tacos as well so many delicious ways to enjoy it!

Ingredients

1 cup of parboiled rice

1 cup of chicken or veggie stock

1 cup of chunky salsa

1 onion diced 

2 tablespoons of olive oil

 

Sauté onions in oil until they soften, add rice and sauté for 3 minutes keep stirring then add chicken broth stir again then add salsa cover and stir every so often but other than that you can finish cooking like you would rice.

 

Now For The Corn

6 pieces of corn

1/4 cup of mayo

1/4 cup of sour cream

chilli powder

lime juice

3 cloves of chopped garlic

Mexican cheese if you can't find it use parm

I steam the corn for a few minutes then coat the corn with the mixture and grill on the bbq then add a squeeze of lime juice and top with fresh chopped cilantro.

 

I just had to try this corn after Nacho Libra "Get that corn outta my face!"
